From Nicolas' profile, air racing takes place in fleets and on planets already. The Vanquish races seem like the professional league of VF racing. You commission a serialized story featuring Hasegawa kit customs and then publish it. Dengeki and Model Graphics love to publish custom Valks, so to base a story exclusively on them is a great marketing gimick.... Wonder if Kawamori was thinking of the F-14-----it's said that opponents learned to "read" the position of the wings as a clue for the plane's energy status---and soon after F-14 pilots started to adjust the wings manually to try to trick their opponenets. As Tenjin Hidetaka came up with the redesign artwork, I believe credit goes to him. As for a connection to the F-14... unsure. The nuance in the translation is that it's simply a ploy used in racing. Most of the visuals we've seen have been mostly in fighter mode because most of the visuals use kit-bashed 1/72 Hasegawa kits. This novel is being published by Dengeki Hobby, after all. The fact that one bad turn in that "bakemono" can lead to a "fireball", probably sheds some light on why Hakuna keeps losing in the big races. Engine and performance specs of Hakuna's VF-1X++ (Hakuna Special): 2x L.A.I. ELA-3000 thermonuclear-burst turbine engine (maximum thrust in space 630 kN), emergency acceleration booster unit (output unknown), thrust reverser, 3D maneuvering nozzles.
